Vegetarian Dishes - An Introduction
Most Jaffna people would have some vegetarian dishes as a part of their meals in addition to non vegetarian dish in the case of non vegetarians. Vegetables were available in plenty and mostly fresh.
Most of the times, the vegetable dishes were garnished for a better taste and flavour at the time of cooking. The method of garnish would be the same irrespective of the dish. This garnish was rarely or never used in non vegetarian dishes.
Garnish for vegetable dishes:
Oil 2 tablespoon
Mustard seeds 1 teaspoon
Onion 1 medium
Dry chillies 3
Curry leaves 10
In 1 tablespoon oil in a hot pan, add mustard seeds, wait until they start popping.
Then add diced onions, curry leaves and cut dried chillies pieces.
Fry all these until onions become golden and the flavour emanates.
Add this mixture to the curries after they had been cooked and stir in and leave them to rest.
If you fry these in ghee it tastes better!
