Sambals - An Introduction 

The word sambal might have originated from Malaysia or Indonesia. Sambal is very popular in Yarlpanam and is used as a condiment or as a side dish. It can be very hot. It is simply a spicy condiment made from chillies and salt. A more elaborate form of sambal may include onion, coconut, lime juice, tamarind and other ingredients like ginger.

Chutney is a term for a variety of sweet and spicy condiment. The process of making chutney involves crushing the ingredients together. The use of stone mortar and pestle was vital to create this chutney but now electric grinders are used.
