Buriyani Powder

 

Buriyani is a Malay dish and not so traditional in Jaffna, however some families enjoy this dish at certain festivity times. Buriyani powder also involves dry roasting of main spices and grinding them to a powder. Due to the spices losing their potency, it is advised to store this powder for a couple of weeks. However, there are many varieties of Buriyani powder and pastes available in the market. You can experiment with different ones and stick to which ever you like.

Ingredients:

Dry red Chillies 50Gms
Coriander 100Gms
Cumin 20 Gms
Cardamom 10 Gms
Pepper 20 Gms
Cloves 10 Gms

Method:

Dry roast all the above separately and grind in a grinder to make a fine powder. Once made let it cool and store in jars. Some people prefer to make it when necessary.
