Mutton Dishes - Explanation

 

In Jaffna, mutton is goat meat. In the west, mutton is meat from mature sheep. Usually lamb meat is consumed as it is tender and the meat is called simply lamb. In the West you could buy goat meat in some Indian, Pakistani and Sri Lankan grocery and meat shops and they call it goat meat.

Whatever term is used, lamb is tender and cooks easily but the other two mutton and goat meat take longer to cook and you have to take a note of this.

In the following recipes we use the terms lamb and mutton which here mean the same meat i.e. lamb in the West.
