Rice Porridge - Paal Kanchi
Red raw rice 2 cups
Coconut milk 3 cups
Water 3 cups
Salt to taste
Wash and drain the rice.
In a pot boil the water and add the rice and continue to cook.
When the rice is soft add the coconut milk, salt and stir and continue to boil for two minutes.
Consistency should be of a thick soup.
Remove from fire and serve.
Serve with: Best with Jaggery or very hot coconut sambal.
