Stuffed Chillies / Tomatoes 

These are served as snacks and at parties.

Ingredients:

Pepper or White green curry Chillies or Tomato
Plain wheat flour for the batter
Bread crumbs

For Stuffing:

Vegetables like Carrots, Peas, Beans, Cabbage, and Cauliflower - the choice is yours and quantities should be about 200g or use frozen mixed vegetables
Potato 100 Gms
Green Chillies 4
Onion 1 medium
Ginger 1 inch piece
Garlic 2 cloves

Method:

Make the stuffing first:

Skin and boil potato and mash coarsely.

Grind ginger and garlic into a paste

Cut your selection of vegetables into small pieces and steam them until cooked.

In hot pan add 1 tablespoon of oil and fry the diced onions until soft.

Add the garlic, ginger paste and stir.

Add the mixed vegetables and salt and stir

Add mashed potato and mix well. Set aside.

In other words this vegetable mixture is made exactly the same way as for cutlets.

For the batter:

Mix flour and water to form the batter, add little salt to taste.

Pepper or long white green chillies:

Soak chillies in boiling water and as soon as it turn lighter, remove from water carefully do not break them from their stalk.

Make cut in the middle and remove all the seeds.

Fill inside of the pepper with the vegetable mix and close the slit.

Roll this pepper in the batter and then in bread crumbs and deep fry in hot oil.

For tomatoes:

Cut into half and scoop out the seeds in the middle, fill with the mixture and roll in batter and bread crumbs and bake them in oven.
Do not fry them.

Variations:

In the stuffing, replace vegetables with prawns or minced lamb.

Boil prawns and coarsely mash them or cut into small pieces.

Skin, boil and mash the potato. Mix mashed potato, mashed prawns with fried onions, chilli powder, salt and leave this mixture to cool.

Similarly with minced lamb, fry diced onions until golden in a frying pan, add minced lamb, salt, coarse pepper powder and little water and cook until lamb is soft and all the water has been absorbed.

Now add mashed potato and mix well. Set aside this mixture.

Substitute either of this mixture to make stuffed chillies or tomatoes and they will be non vegetarian dishes.
