Jackfruit seeds fried - Palakottai Porial

 

             

                          Jackfruit seeds fried

 

Similar to fried ash plantain;

Remove skin, wash and cut each seed into four quarters.

Mix with chilli powder, turmeric powder and salt.

Deep fry until crisp.

Do not fry too crispy as it will be too hard to eat.

 

 

Snake gourd Curry

 

Ingredients:

Snake gourd 500 Gms
Onions 1 medium
Curry powder 1 tablespoon
Milk 1 cup
Salt

Method:

Scrape the skin off with a knife.

Cut snake gourd length wise into two, remove all the seeds and cut into small pieces. Wash well and drain

Cook in a covered pan these pieces with diced onions, curry powder in ½ cup water.

When snake gourd pieces are soft, add milk, salt and bring to boil.

Simmer until gravy thickens.

Garnish and remove from fire.

Variation:

Some people cook this with red lentils:

Cook 100 Gms of lentils and 200 gms of snake gourd pieces, diced 1 medium onion, diced cloves of garlic, 5 green chillies, split lengthwise and ½ teaspoon turmeric powder in water first and when cooked, add salt and milk and bring to boil and simmer.

 

 

 

Long beans curry

 

 

Ingredients:

Long beans 200 Gms
Onion 1 medium
Curry powder 2 teaspoon
Milk 1 cup
Salt

Method:

Clean and wash long beans. Some of these may be mature ones which you split by hand lengthwise and remove and use the seeds; the others break up into one inch long pieces.

In a pan cook these with diced onion, Curry powder and one cup water.

When beans are soft, add milk and salt and cook for a further 2 minutes.

Simmer until liquid thickens.

Garnish if you like.

 

 

 

 

Snake Gourd Varai

 

Ingredients:

Snake Gourd 250 Gms
Onion 1 Medium
Dry Chillies 3
Curry leaves few
Mustard Seeds ½ teaspoons
Turmeric Powder ½ teaspoon
Coconut fresh scraped 3 Tablespoon
Oil
Salt
Water

Method:

Scrape the skin of the snake gourd off with a knife well.

Cut lengthwise into two.

Remove seeds and discard them.

Wash well inside and outside.

Cut the gourd into small pieces or finely.

In a frying pan, add this fine pieces and some water and salt and cook covered for five minutes or until the water has been absorbed.

Check if cooked else add more water and cook further.

Once cooked, remove and save.

In the same pan heat little oil and fry diced onions, cut dry chillies, mustard seeds, turmeric powder and curry leaves until onions are golden.

Now add the cooked snake gourd pieces and coconut and stir until the mixture is dry.

Add salt if needed.

 

 

Pumpkin curry

 

Pumpkin is a fruit and the curry made out of it is mildly sweet and so do not add too much curry powder.

Ingredients:

Pumpkin 300 Gms
Onion 1 medium
Curry powder 2 teaspoon
Green chillies 3
Milk 1 cup
Salt

Method:

Remove the skin which is hard on the outside and the seeds inside.

Cut the rest into 1 ½ inch cubes.

In a cooking pot, place the pumpkin pieces, diced onion, chopped green chillies, curry powder and ½ cup of water and bring to boil.

Cook on low heat until pumpkin pieces are soft and cooked.

As you stir, the softened pumpkin pieces will get mashed.

When cooked, add milk and salt and cook for 3 minutes.

Garnish before you remove from fire.
