Egg fried rice

Ingredients:

As for vegetable fried rice +
Eggs 2
Turmeric powder ½ teaspoon
Oil 1 tablespoon or ghee 2 tablespoon
Ground fresh pepper powder 1 teaspoon
Salt to taste

Method:

Cook the rice and vegetables as for vegetarian fried rice and keep separately.

Place a large frying pan on the cooker and heat the butter.

Fry the diced onion until golden brown.

Beat two eggs with turmeric powder, ground pepper and salt to a smooth mixture.

Add this egg mixture to the fried onions and stir in low heat until the egg has been fried and scrambled.

Now add the vegetable mixture to the fried egg and mix.

Now add the cooked rice to this and mix well.

If you want the rice to be hotter, add more pepper powder or diced green chillies.

Serve this with any meat curry or aubergine curry.

Variation:

If you do not prefer vegetables in your egg fried rice;

Make rice or pilau rice.

Beat two eggs with salt and pepper and pour this into a hot pan with little oil, and stir or scramble and when cooked just add the rice to mix well.
