Fried Chicken Liver
Ingredients:
Chicken liver 200Gms - fresh is preferred
Chilli powder 2 teaspoons
Turmeric powder ½ teaspoon
Roasted curry powder 1 teaspoon
Onion 1 medium
Ginger 1 inch piece
Curry leaves 10
Salt to taste
Oil 3 tablespoons
Method:
Clean and wash liver and keep them whole.
In a pan mix the chilli powder, curry powder, turmeric powder and salt into a paste and mix with liver well. Rest for 20 minutes.
Slice onions into rings and cut ginger into tiny pieces.
Shallow fry the chicken liver in hot oil until they are half cooked.
Add the cut onions, ginger pieces, curry leaves and keep frying in low heat occasionally turning each piece until done.
You can add some lime juice if you like it that way.
Take care while frying liver as they tend to split on high heat.
Chicken Fried
Ingredients:
Chicken 500 Gms - preferably boneless
Onions 2 large
Roasted curry powder ½ tablespoon
Chilli powder ½ tablespoon
Turmeric powder 1 teaspoon
Ginger
Curry leaves 10
Salt
Oil for frying
Method:
Skin, clean and cut chicken into bite size pieces.
Mix curry powder, chilli powder, salt, turmeric powder together in a large dish with sufficient water to make it to a paste.
Put the chicken pieces into this dish and mix well with the paste so that all the pieces are coated with the paste.
Set aside to marinade for 20 minutes.
In the mean time, slice onions into thin strips and chop ginger into small pieces.
In a hot pan add oil and deep fry chicken pieces little at a time. Make sure they are cooked well. Drain and save.
When all the chicken has been fried, in a clean pan, in little oil fry the onions until they turn golden brown.
Now add the ginger pieces and curry leaves and fry further until onion pieces turn crispy.
Add the fried chicken and mix well so that all the chicken pieces are coated with onions and ginger.
Rest for 20 minutes before eating.
